The extensive survey, conducted by a collaborative team from Italy’s University of Parma and the UK’s Cranfield University, examined a broad spectrum of vegetarian and vegan alternatives, with every single product analyzed yielding detectable levels of at least one of nineteen mycotoxins, and many samples containing multiple such substances. This groundbreaking research underscores the ubiquitous nature of these fungal metabolites within the plant-based food supply chain, prompting further discussion on dietary exposure and risk management for consumers.
The rigorous study encompassed a diverse array of 212 distinct plant-based products, meticulously sourced from retail outlets across the UK. The selection included a wide variety of items commonly found in the diets of individuals opting for plant-centric eating patterns, ranging from popular meat substitutes such as burgers and plant-based "chicken" pieces to vegan sausages, and a variety of popular non-dairy beverages derived from oats, almonds, and soy.
